Vapiano

Since mid 2017 we’ve provided Vapiano Sweden with a senior consultant that have held the position of Beverage Manager in their organisation. The collaboration started with a pilot project at Vapianos flagship restaurant on Sturegatan, Stockholm (the first in Sweden) that was to be renovated and relaunched just in time for their 10 year anniversary on the Swedish market. After several years with declining beverages sales, our new beverage program and operational efforts quickly stabilized sales and turned the curve. Both total sales and avrage consumption per guest were up!

The success led to Vapiano contracting us to roll-out the program at all 9 outlets in Sweden and to oversee all beverage related questions as Beverage Manager in Sweden & Denmark.

Apart from tasks such as purchase audit, procurement and beverage negotiations, recruitment, educations and continuous follow ups we now also provide development of the food program as well as input on service and marketing related questions.
